One of the memories that came up during Chase's Grandmother's memorial when the family was gathered afterward was of recipes and dishes that the grandchildren remembered. Chase's favorite? Taco Bake. A casserole recipe from the back of the bisquick box.
The family was split pro-Taco Bake versus "yuck." I was curious, and Chase loves food. So for Super Bowl Sunday, I made some of the famed childhood Taco Bake. Unwittingly, I made it really well. The verdict was having the fresh toppings, lettuce, tomato, onions, salsa, and sour cream, elevated it just enough to feel good. We even converted Chase's parents to Taco Bake fans.
Taco Bake
Prep: 20 min - Bake: 35 min - Cool: 10 min
1 pound ground beef
1 medium onion, chopped (1/2 cup)
1 envelope (1 1/4 ounces) taco seasoning mix
1 can (16 ounces) tomato sauce
1 can (16 ounces) whole kernel corn, drained
2 cups shredded Cheddar or process American cheese (8 ounces)
2 cups Original Bisquick®
1 cup milk
2 eggs
Sour cream, chopped tomato and shredded lettuce, if desired
1. Heat oven to 325. Grease rectangular pan, 13x9x2 inches.
2. Cook ground beef and onion in 10-inch skillet, stirring frequently, until beef is brown; drain. Stir in dry seasoning mix, tomato sauce and corn. Spoon into pan; sprinkle with cheese. Mix Bisquick, milk and eggs until smooth. Pour over beef mixture.
3. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 10 minutes before cutting. Serve with remaining ingredients.
Top with shredded lettuce, chopped tomatoes and sour cream for a typical treat. To make it extra-special, add sliced ripe olives, guacamole and something spicy such as chopped jalapeno chilies or crushed red pepper.
