Snowpocalypse

Or what they're also calling Blizzard 2011, Snowmageddon, snowly cow, Da Blizzard, Snowy-B.I.G., SnOprah, and Snomg.  Chase left work at 1:00, Kirsten at 6:00 and have hunkered down away from the howling winds and crazy snow.  We have yet to experience thundersnow, but I'm sure it's coming.  Either way, Chase has a real life snow day tomorrow, which is kind of cool.


Here's what I'm doing during the snow storm!  Surprise, baking brownies from scratch.  I found a recipe on allrecipes.com and have been carefully adjusting it to make gooey brownie goodness.

Chewiest Brownies - Not Cake-y At All
3/4 c. Unsweetened Cocoa Powder
1/2 c. Melted Butter
1 1/2 c. White Sugar
2 Eggs
1/4 t. Salt
1 c. All-purpose Flour
2 t. Vanilla Extract
1/4 c. Oil
Confectioners' Sugar (Optional, for decoration)

1. Preheat oven to 300 degrees F.  Grease one small pan.

2.  Combine the cocoa, melted butter, sugar, eggs, salt, flour, vanilla, and oil.  Mix until well combined.  It should be very thick and sticky.

3.  Spread mixture into the prepared pan.  Bake at 300 degrees for 30 minutes.  Cool completely.

4.  Get glass of milk and feel accomplished because you just made brownies from scratch.
